Good morning makes your day. When you get up, have a shower, listen to some good music and eat delicious breakfast, it will make you happy. It makes me happy for sure.
I love this recipe for pancakes. It’s easy to prepare and simply delicious. It takes 5 minutes to prepare a dough and about 10-15 to fry it. Then you can decide how you’d like to eat it. I eat my pancakes on many different ways. I like it with bacon, custard sugar and lemon or with fruits. For sure I like it sweet with an explosion of flavors. I wanted to buy fruits, but berries are quite difficult to find right now and when you get then, it does not taste right (winter period). That’s why I got some frozen berries. I placed it in a strainer, pour some warm water over and left it to unfreeze for a while.
And you know what, it was amazing. I spread mascarpone cheese on each pancake, placed a bit of frozen fruits on it and then I created a tower. In the end I poured an agave syrup over it. I must tell you it was amazing. So delicious!
This day I woke up a bit late and Tomasz told me that he already had his breakfast, but after he saw what I did, he changed his mind straight away.
PS. I arrived in San Francisco and I love it straight from a first glance.
You will need for 8 medium pancakes:
- 1 cup wheat flour
- 1 tbsp baking powder
- pinch of salt
- 1 cup milk
- 2 tbsp melted butter
- 3 tbsp maple syrup
For serving:
- mascarpone
- frozen fruits
- agave syrup or maple syrup (optional)
Combine all ingredients for pancakes in a bowl by mixing. Fry on a pan with a little bit of oil. When ready spread mascarpone on each pancake and top it with defrost fruits. You can create a tower out of it as I did.

Maybe it’s because of an egg you added. The recipe is tested and I make it often. Never me or nor of my friends had an upset stomach. The amount of baking powder is not ridiculous. It makes pancakes fluffy.

What a tower of goodness!! I use frozen berries too during the winter and mascarpone is my favourite mild cream cheese… I’ve visited San Francisco several times and I LOVE it. Have a great time there, Marta!
