Pancakes with Strawberries

I am in a middle of an amazing adventure and it’s started few weeks ago. It made me discover Berlin from another yummy side (I am not overrating anything over here) and it’s like being a new-be again. Sometimes we think that we know a lot and then someone asks us to look on it from a different perspective. And it makes us realise that we have so much more to discover. I am in a run lately, I promise that my entries will be more personal soon, very soon, I just need to finish few things, so the time won’t be something that I’m constantly lacking. But also I am scared that I’ll be missing this crazy business like crazy, so I want it to last.

I am eating good but fast, my breakfasts need to be easy. And this recipe works well. The pancake dough has this lovely coconut flavour thanks to a coconut oil and flakes. I love it. And I am still obsessed with strawberries, as some things never change.

You will need:

  • 1 cup plain yogurt
  • 2 tbsp coconut oil
  • 1 tsp honey
  • 2 eggs
  • ½ cup oat flour
  • ½ cup rye flour
  • ½ tsp baking soda
  • pinch of salt
  • pinch of ground cinnamon
  • 1 tsp coconut flakes
  • 1 tsp chia seeds
  • strawberries
  • oil for frying

Place all the ingredients except for strawberries in a bowl and mix so it connects (not more). Cut strawberries in big pieces (I cut them in half).
Heat your pan with an oil and place a spoon of dough for each small pancake and place strawberry in a middle. Fry on both sides so it’s nicely golden.

      2 tbsp of coconut oil 🙂 and I’m not sure what you mean by ‘mix as a drink’.
