As I was a busy busy bee, I definitely liked fast recipes. This one is definitely easy and delicious.
I spent 2,5 week just with my daughter. It was me and Mia and we had a chance to get to know each other better. A day before Tomasz left I was in panic. It is not easy to manage a tiny baby with your partner, but only me? OMG! I’ll die! Or I’ll make 1000 mistakes! Or something will happen! Or or or.
Nothing has happened, well except for Mia’s first roll from belly to backs (all by herself!!! I’m so proud… And after my reaction I’m sure that she’ll be trying to do more super cool things). What I’ve learned? We women don’t need men! Ok, it’s not true, but it was fun to write it. I’ve learned that I can do it. I was tired, still am as Mr Greber is on a way from an airport, but I did not only manage a baby – I’ve managed a whole apartment, food, two cats and even blogging. And one more thing – children are awesome, just like they are. Mia is even more awesome when she starts to cry – she puts her mouth in a spout, her face becomes red in one second and it looks like the biggest tragedy in a world has happened to this child. Her eyes produce tears since few weeks so it looks even more tragic.
As I wrote before I have an enormous respect to mothers raising children just by themselves. I did it only for few weeks and I already can’t wait for my party boy to take over so I can sleep for long hours. But I am kind of proud of myself as well. I know that I am much closer with Mia now and that she knows my face, my voice and she counts on me (especially in a diaper situation).
Oh and the important thing – I’m grateful to my friends who actually care. Some of them brought me food, others met with me for a coffee or a walk or a walk with coffee. One even came for two days and told me that Mia is cute when she woke her up at 4 am. Thank you!
In few minuter Tomasz will enter door to our apartment and my adventure will be over. But, as in life, another will start. In few days we’re flying to Lisbon, so each tip is welcome 🙂

You will need:
- Puff pastry
- 125g spinach
- 125g goat cheese
- 2 tbsp fresh thyme
- mango
- beetroot, baked
- salt and pepper
Roll puff pastry on edges or cut in smaller pieces and roll edges of each of them. Place in an oven and bake in 200*C for about 15 minutes. A middle of the pastry will grow so just push it down. If the top breaks don’t worry as it most probably will.
Place spinach in a drainer and pour hot water over it. Then squeeze a water out and cut in small pieces. Place in a bowl with a goat cheese and thyme and mix. Place the mix on a pastry. Cut beetroot and mango in slices and place on top. Garnish with salt and pepper. Bake in 200*C for another 10 minutes.

Lisbon is great! It will likely be raining. Go to Pastéis de Belém and eat everything. Their toast is absolutely delicious. It’s probably going to be full of tourists, so try to guess which hours/days are less likely to have an army of them. Sometimes they’re just queuing outside for a pastel, and there’s no one inside in the tables, and you can just sit and ask for one anyway, doesn’t cost more! A latte is a “galão”, in some places you have to ask “de máquina” to get one with a freshly poured espresso.
“A Padaria Portuguesa” has the best “pão de deus” ever made. It’s a sort of brioche bread with a coconut based paste.
If an espresso costs more than 0.7e, and the place isn’t a hotel, a super famous “pastelaria” (patisserie), or the price for sitting outside (things are usually more expensive if you sit outside), don’t go there.
There are lots of great Indian/Mozambican/Angolan restaurants from people who moved to Portugal during/after the colonial war. “O Cantinho do Aziz” is a great one.
Sintra is a little town one hour away from Lisbon, with castles and mansions and giant gardens. The Pena Palace (“Palácio da Pena”) is the best known one, you can get tickets for just the gardens and the outside of the Palace or for everything. I usually just go for the gardens 🙂 They’re amazing. “Quinta da Regaleira” is next to it and I like it even more. It has tunnels connecting different parts of the gardens and all! But maybe Mia won’t think they’re that interesting? The local pastry is called “travesseiro” and Piriquita usually has them straight out of the oven, still warm. It’s also crowded on tourist rush hours, but there’s two of them for your convenience 🙂
Best burgers are from Honorato, there are several of them in the city.
Cascais is another town close to Lisbon, and by the sea, not the river. It’s a lovely place to walk around, full of little shops, cafés, and spots where you can sit and look at the ocean.
There are restaurants with Fado nights, where someone will be singing after dinner.Ok, I’m going to stop now :)Oh, I don’t know how you carry Mia around, but Lisbon is very hilly, the streets are small, the sidewalks smaller, all in cobblestone with random stones missing. Not very friendly for baby strollers.
