Pea Sandwiches with Ginger and Ricotta

I’m obsessed with one song and I listen to it over and over again. I have this strong feeling that

I’m obsessed with one song and I listen to it over and over again. I have this strong feeling that the more I like it, the more Mr T starts to hate it. Why boys are not as us girls and they don’t feel like listening to something all the time? So I’m trying to be understanding and I wear headphones to ease his pain. He tells me that me singing is not a good substitute. Boys, it’s impossible to make them happy.

But as a good loving girl I made him a sandwich. And now he does not complain anymore 🙂

You will need (for 4 sandwiches):

  • 2 cups fresh or thawed frozen peas
  • 2 tbsp softened butter or olive oil
  • 1 tbsp minced ginger
  • ½ cup chopped fresh mint
  • salt and pepper
  • 1 cup ricotta
  • 8 slices of bread

It’s more than easy to make this ones. Mash the peas with the butter or oil, add ginger, mint, salt and pepper and mix it, until all ingredients connects nicely. You do not want to overmix it and create something that looks like a sandwich spread. Divide peas mix and ricotta between 4 sandwiches. Start with spreading ricotta on it, top with peas, cover with another slice of the bread and it’s ready 🙂

    I don’t even like peas but you made them look beautiful. And I do the same thing with songs. I’ll play one on repeat for hours and somehow I never get bored by it.

    Hey, we’re exactly the opposite–I like quiet and start to hate songs at the drop of a hat, while he not only plays but sings them over and over. But it’s all ok! Especially with sandwiches. I must say I would not have thought to put peas in a sandwich, but the combination with ricotta sounds great.

    A pea sandwich is so unique! I remember seeing these on Joanne’s site. The ricotta makes it ok to put peas on a sandwich! A super yummy combination.
