You won’t believe how easy it is to prepare your own homemade lemon curd. Then you can store it in a fridge and have each morning just a little bit with a scone or a piece of fresh bread. I went to Westerpark for a breakfast some time ago and tried amazing one, what inspired me to search in an internet for a perfect recipe, and I think I’ve found it.
You will need (for small jar):
- 2 eggs
- ¼ cup freshly squeezed lemon juice
- 1/3 cup sugar
- 60g butter, cut into small cubes
Mix the eggs, lemon juice and sugar in a pot, continue whisking and cook over low heat until the mixture thickens. Remove the bowl from heat and whisk in the butter cubes until everything will well combine. Leave to cool.
