Pita with Avocado and Fried Egg A’La Fast Breakfast Pizza

Avocado is a natural butter as some people like to think.

A friend told me once that avocado is a natural butter and he could not imagine a breakfast without it. It was in Australia and we were aware of one market where during a magical hour you could get almost every kind of fruit or vegetable for A$1/1kg. Happy days! Nowadays I have to pay a bit more, but who’s complaining 🙂

I must tell you that honestly I can’t complain. Life keeps me busy, especially during the past few weeks, but I do what I love and it’s so much fun. 

The only thing is that I miss my kitchen without a fridge and my cooking. Even relationship with my cat was kind of through the skype (I realize he had no idea it was me telling how much I like him). 

I’m back in Berlin (again!), I’ve showed Rysiek a new trick and organized my kitchen. It took so much time that I had to prepare something fast and not complicated to celebrate my come back.

Ladies and gentlemen, it could not be easier – pita with smashed avocado, tomatoes, fried egg and herbs. You can find an original recipe on Justina Blakeney’s blog. I hope you like it spicy, because chili flakes make the taste awesome. 

You will need:

  • pita
  • lemon
  • ripe avocado
  • egg
  • tomato
  • chives
  • salt & pepper
  • chili flakes
  • olive oil
As I said it’s easy. Take the ripe avocado and smash it. Add salt and pepper. Heat a frying pan and fry pita on both sides, both sides should be golden. Place pita on a plate, spread avocado, drizzle with lemon juice and olive oil, place freshly cut tomatoes on it and sprinkle with salt, pepper and chili flakes. Fry the egg and place it on top of your pita, put some chives on top. You can roll it, most probably it will be more comfortable version, or eat it like a pancake.
