Pork Roast with Plums

In Poland we have an amazing traditions for Christmas and we prepare plenty of an amazing food. My mother always makes pork chop with plums and then we eat it with a bread as often as possible. I can honestly admit that she’s a master of this meal. I know it’s not Christmas time, but my mother came for a visit and she made one for me and Tomasz. And it’s yummy yummy!

You will need:

  • 1,3 kg piece of pork
  • ½ glass oil
  • 1-2 tsp lemon juice
  • 2 garlic cloves
  • few sprigs of fresh thyme
  • 2 bay leaves
  • few grains of green pepper
  • pinch of chilli
  • salt and pepper
  • dried plums

Clean the piece of pork. With a long sharp knife make two holes through the whole meat and push plums into it (as many as possible). Rub it with salt and pepper. Mix oil with chopped garlic, lemon juice, chilli and green pepper.

On a silver baking paper place pork and on a top of it put fresh thyme and bay leaves. Pour it with the oil mix, rub the silver paper around the piece of meat and put it to the fridge for a 24h or at least a couple of hours. 

Preheat the oven to 200°C. Bake meat for around 2 hours. When it’s ready, cut the silver on a top and bake it for another 15 minutes so it will brown a bit on a top.

It tastes amazing with a piece of fresh bread.
