Potato Pancakes with Fried Egg

This is an easy and yummy breakfast perfect for everyone who loves eggs, potatoes and like to have something fancy but fast.

Life is a tricky business. Lately I have been sure that I finally have it all sorted out and BUM, Mia started to get all different kinds of viruses. I know that it’s a payback for sending her to a kindergarten, but I have never expected to wake up to a kid having her eye totally swollen. It’s nothing serious, we have everything under control, but lately each day kept bringing a different surprise, like 41 degrees temperature. The cool part is, that my kid is still a volcano of energy. Whatever happens, she wants to have fun and definitely wants to eat. If I ever wake up to Mia without an appetite, I’m calling an ambulance straight away.

My life with Mia is pretty cool. She loves traveling and 4h drive is a blast, as long as I drive at night and she can sleep. When she has a problem, a piece of banana (or a whole one) will solve it. She also likes new places. If she finds there a piece of toy, she feels like home, if not, she will look for it in other mom’s purses. If she won’t be a food critic, she will make a good thief one day.

But there are also days when she goes to a kindergarten to play with other kids and I have a few hours just for myself. I love it. At the beginning I was sitting and trying to figure out what to do, but now I make a cup of a good coffee and cook, plan, style, photograph and enjoy each second of my “Marta time”.

This is an easy and yummy breakfast perfect for everyone who loves eggs, potatoes and like to have something fancy but fast. It will go great with fresh veggies on the side and avocado.

Recipe

You will need:

  • 1 potato
  • 1 small shallot
  • 1 tsp chives
  • 1 egg
  • salt and pepper
  • oil for frying
Grate potato, place it on a paper towel and get rid of all the water. Move it to a bowl, add chopped shallot and chiles, season with salt and pepper. Heat a pan with a little bit of oil, place a potato mix on it and fry on each side for about 5 minutes, or until golden brown. Then fry an egg as you like it and place on a potato pancake. Season with salt and pepper.

    I love that a banana can make Mia better…don’t you wish this could work with adults sometimes?! It would be amazing. Food does help though, and starting the day with a beautiful breakfast like this is just what I need!
