I am not a typical person, or maybe I am a typical woman? What I mean is that there are times when I can hardly understand my own behaviors. For instance it took me 5 months in South America to see that I want to learn spanish. It took me 1 year in Berlin plus an idea to move somewhere else to start really learning German. I am attending an intensive course with people who are excited about this language and whenever they ask me why didn’t I learn it earlier, I have no idea what to say. Simply “because”.
So each day I bike to attend my course and each day I bother people on a street and am trying to have a chat (some things don’t change). Some people like it, some people are very difficult to understand. But one thing is true – living in Berlin while understanding what people around are talking about is so much more fun 😉
Going back to the recipe – it is tasty and healthy. I make my own pumpkin squash, as I believe in making your own ingredients and I can not find cans with it in Berlin. It’s easy, just bake pieces of pumpkin until it’s soft. The rest is very easy.
- ½ cup oat flour (grounded natural oats)
- ½ cup whole grain flour
- ½ cup pumpkin squash
- 1 egg
- pinch of salt
- 1 tbsp baking powder
- 2 tbsp maple syrup or agave syrup
- 2 tbsp butter or a coconut oil
- ½ apple, cut in small cubes
- 1/8 tsp cinnamon
- 1/8 tsp ginger
- ½ cup milk
- 1 apple
- 1 tbsp honey
- 1 tsp olive oil
- 1 tsp thyme
Mix all ingredients for pancakes in a bowl and fry over a medium heat on 1 tsp of oil. To make a pumpkin squash I cut pumpkin and bake it in 200*C for about 10-15 minutes (maybe you have a better idea). Then I place pieces in a cup and smash it with a fork (easy one).
You can serve your pancakes with fried apple and a maple syrup. Cut apple in 8 equal pieces and fry on 1 tsp of oil, with honey and thyme until soft.

I’m looking forward to seeing the pumpkins here soon. I really not in a hurry for fall since I somehow seemed to have missed summer. If it makes you feel any better I waited 40 years to start learning Italian, because I have no idea. He he. Too bad you weren’t here in CA, I’d probably be wandering by hoping to score some breakfast.

learning a new language is so challenging i think esp when you are older. I tried Spanish but I had no one to practice with and now I dont remember anything. On a different note, i love how you brought Fall in this pancake.

Such incredible experiences you are having. I remember working so hard in Japan to pick up 20 new vocabulary words a day. Then, I would try to string those words together somehow to see if anyone could understand me. I felt so childish but it was so much fun!

There is no such thing as cans of pumpkin puree here so boil and mash it we must. You are lucky to be learning the language in the country as you have so much opportunity to practise it.
