Breakfast in an autumn forest.
I got obsessed with forests. Not for mushroom picking, as this one usually ends up for me with an empty basket (usually, because once I found a half of a mushroom). I like to eat there. I also like to take my friends and family to the forest. Two weeks ago I took Mia. She loved it. For 15 minutes she runs like crazy and then she walked me straight back to a car. 23 months old girl has its rights.
You won’t believe, but I also have adult friends, who want to hang out with me in a forest. One of them is Emo, who didn’t only eat the food, but also made a handsome model. The only problem was, he wanted to eat it straight away. Sounds like a regular process, but when you want to make food pretty and end up short on products, it changes your plans. I managed to keep it safe for about 5 minutes, before Emo made his bite out of it.
This whole trip was about finding a wooden deck, where we can sit, eat, talk and have a perfect view over a lake. I made a research on a google map and found a few places in my favourite area. It turned out that each one of them was a private possession. We’ve decided on taking our chances and walking around a big lake, through a forest, in hope of finding a perfect place. It has not happen for some time, so we set up a base in a beautiful spot with kind of a table in a lake. It worked. We ate, or rather Emo ate and I took pictures, meantime, we saw two women swimming in the lake. It was about 9*C, but they seemed to have heaps of fun. This is when we discovered, that there’s a wooden deck about 10 meters from us. Life can be tricky sometimes.

YOU WILL NEED FOR BALLS:
- 4 & ½ cups corn tortilla chips
- 1 & ½ cups cooked pumpkin
- 1 chickpea can, soaked
- 2 cloves garlic
- 1 & ½ tsp sea salt
- 1 tsp black pepper
- big pinch of cayenne pepper
- 1 tbsp apple cider vinegar
- 2 tbsp olive oil
- 3 dried dates
- 1 tablespoon mayonnaise
- 2 handfuls kale, stems removed
YOU WILL NEED FOR SAUCE:
- 2 tbsp mayonnaise
- 1 tsp tomato paste
- pepper and salt
Now let’s make this delicious balls. Place tortilla chips in a blender (or a food processor, but I don’t own any) and make a flour out of it. Add pumpkin, chickpea, garlic, salt, peppers, vinegar, oil dates and mayo. Blend until it’s smooth. If your blender won’t feel like doing it, use a hand blender like I did. Add kale and blend some more.
Form little balls in your hands, place it on a baking tray covered with a paper and bake in 175*C for about 25 minutes. after half of time roll them a bit, so it’s nicely golden all around.
I served mine with some spinach, more baked pumpkin and a sauce.

THis place looks so beautiful, so restive, so peaceful!! I hardly looked at the food, honestly, my eyes were so focused on the sights and colours of nature there, this is a dream place for sure!!

These pictures are lovely and your friend deserves to be photographed with clothes like that – he looks great.My boyfriend always moans when I want to photograph the food before I let him eat it! I let him have the less ‘photogenic’ ones first, but he’s normally drawn to the more attractive ones!
