Pumpkin Ginger Waffles

I bought a very bad waffle machine ( I always believed that buying the equipment for more than an affordable price is a gift from heaven, but this purchase is an exception). Apart from this I’ve found an amazing waffle recipe. The machine is poor but at least recipe works 🙂 

I have this amazing memories from holidays with my parents on a polish sea side. I used to eat tones of waffles over there, trying all the possible toppings. But my favorite one is simply with butter and a custard sugar. 

I also need to write one more thing – I love coffee!

You will need:

  • 1 & ¼ cups flour
  • 1 & ½ tsp baking powder
  • ½ tsp baking soda
  • pinch of salt
  • 2 tsp ground ginger
  • ½ tsp cinnamon
  • 2 eggs
  • ¾ cup buttermilk
  • ½ cup pumpkin puree
  • ½ cup sugar
  • ¾ tsp vanilla
  • 3 tbsp butter, melted and cooled

Heat the waffle machine. In one bowl mix the flour, baking powder, baking soda, salt, ground ginger and cinnamon. In another bowl whisk eggs, buttermilk, pumpkin, sugar and vanilla. Connect ingredients of both bowls. 

Serve with butter and maple syrup.
