Pumpkin Granola Cups

I made this pumpkin granola cups because it’s easy, fast na delicious.

Few months ago I had a conversation how it is ti work, post on my blog and to be a mom. I honestly answered, that it’s not that difficult, that I’m definitely more organised now, because I need to fit into Mia’s naps, but I totally manage. Few days ago I’ve been asked the same question and my answer was “mate, it’s crazy! This girl is a small destroyer, interesting in things that can harm her or cause a lot of trouble”. Cute safe toys – no no no, but drawers full of keys and coins – yes yes yes.I curse the day when I’ve decided that owning unique pieces of furniture that look cool is cool. No it’s not, as it’s not always possible to make it childproof. But you know what is still super fun? When Mia screams because she want’s to taste something I use for cooking, like cinnamon or nut or cappers. There’s no “girl, you won’t like it, not yet”. She has to and then she tries and then she’s spiting and making this cute face of disgust. So going back to the question – how is it to have a kid and work from home? It is possible, but it is so much easier when you have a family member in the same country, which I don’t 🙂

I made this pumpkin granola cups because it’s easy, fast na delicious. You can make it totally vegan by serving them with soy yogurt. I also used chocolate balls, as I needed it. You can make yours with fruits and fresh mint, so kind of guilt free.

Oh, and there’s an exciting piece of news I got today. I had a pleasure to become a BOHO girl, yet again. I love fashion, but lets be honest, I’ve never thought that I’ll have a chance to become a model. And I did! For one day I was a BOHO girl wandering around my favourite spots in Berlin. There’s sweet Mia as well, so check it out if you have a moment 🙂

You will need (for 6):

  • ¾ cup rolled oats
  • ½ cup coconut flakes
  • pinch of salt
  • 1/3 cup chopped walnuts
  • ¼ cup sunflower seeds
  • 5 tbsp pumpkin puree
  • 2 tbsp olive oil
  • 1 tbsp agave nectar

For serving:

  • soy yogurt
  • fruits
  • fresh mint

Heat an oven to 175*C. Mix all the ingredients in a bowl. Grease muffin form and divide mix between 6 forms. using a spoon or your finger form a cup with it (push it in the middle).Bake for about 15-20 minutes.

When cups are baked, let it cool and then remove from the muffin form. Serve with soy milk and fruits. Or pieces of chocolate. Everything works here.

    Looks amazing! I’m not so sure where i can find pumpkin pure (I live in DK) but pumpkins are easy to find. Anyway because I will have alot of pumpkin I wanted to ask if you think they can be frozen? That way i could just make a large batch.

      You can make it yourself. Just buy pumpkin, cut it in pieces, steam and then blend 🙂 Pumpkin puree can be frozen.

    I love the idea, but mine haven’t come out so good. they hardly keep their form, most of them is just falling apart. any idea why?

      You have to let them cool before removing from a form. Maybe yours were too warm? These are very soft when still warm.

        I did let them to cool down in the form, so this is not the reason. When cold, are yours solid structure, or are they easy to brake?
        I love the idea, so I need to work on the recipe. Do you think, the quality of pumpkin pure is essential? mine was king of loosy, watery… what king of pumpkin have you used?

          It is delicate, like oat cookies, but pretty solid. My pumpkin puree was thick. I steam pumpkin amd then blend it. If pumpkin was too watery, this could be a problem, as pumpkin is a ‘glue’ factor. The good thing is that you can still ise these cups as granola ?
