Pumpkin Pancakes with an Apple Maple Compote

I don’t know how many times I’ve wrote that internet is an amazing place. I need to write it again. It helps me to discover amazing blogs and recipes almost each day. I’ve been a bit busy for the past months and I didn’t really have time to go to the bookstores and search for new interesting positions among cook books. But thanks to an internet I’ve found so many interesting recommendations, thank you fellows bloggers. Each time I discover a new blog, that is so unique and special. Yesterday I’ve found Honey & Jam blog and I fell in love with it. You should definitely check this out.

This breakfast made me and Tomasz stop our conversation. It was that good.

And from a strange facts – I don’t have a fridge in my apartment. Still. I tought it will be impossible not to own it, but actually it’s ok. I buy as many products as I need and in a proper amount. You may think that the disadvantage is that I need to go on a market each day, but I actually like it. It’s also a way of meeting interesting people. But I love ice creams and I think that it’s the main reason to buy one soon 😉

You will need for pumpkin pancakes (for around 12):

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1/3 cup sugar
  • 1/2 tsp sea salt
  • 1 tbsp pumpkin pie spice
  • 1 & ¼ cups buttermilk
  • 1 cup pumpkin puree
  • 2 large eggs, lightly beaten
  • 2 tbsp butter, melted

You can buy the pumpkin puree of you can make it. It’s easy. Just cut the pumpkin into pieces and cook it until soft. Then smash it with a fork. Combine all the ingredients in a large bowl, but try not to overmix it. It’s ok if the butter is a little bit lumpy.

Fry it on a pan over a medium heat. You can fry them big, or small like I did. Fry both sides until golden. Just be careful, it’s easy to burn it ;)


For an apple maple compote:

  • apples (½ per person)
  • butter
  • cinnamon
  • maple syrup

Cut the apple into slices. Heat the frying pan over a medium heat, melt a spoon of butter in it and add apples. Sprinkle it with a cinnamon and wait it gets softer. Then turn apples on another side, sprinkle with cinnamon again. When it get’s soft add the maple syrup to cover the apples. Let it bubble away for a minute or so. Pour over warm pancakes.

    No fridge? Where do you keep milk? Sorry I don’t think I can live even half day without a fridge (dramatic?) so I am assuming you live very close to cafes and markets… right?! Haha. Your pumpkin pancakes look so pretty! I’ve never seen pumpkin pancakes before and they got me very excited. Apple maple compote is such a great idea to accompany with the pancakes.     Yay, I’m part of your no-refrigerator club… not by choice right now though. The one we have broke last week and damn, it’s hard. So inconvenient. I think if I had lots of free time to cook and shop it would be ok, but I can’t get to the store each day and I always make “too much” so there are leftovers. Without a refrigerator it’s very tough… not to mention the storing of basic things like cheese, butter, milk, eggs and other perishables 🙁 A new one should be delivered on Friday, fingers crossed!

    i have got to get more creative with pumpkins…i just use them in soups and curries but you have done these pumpkins justice by using them in a pancake recipe! i just woke up and would kill to have these for breakfast…lolliked you on facebook coz how could i not…you are so talented 😉

    Oh Dear! This looks good. Sticky and sweet on top of the good pumpkin pancake! I cannot live without a fridge (I tried when a few months ago for a couple of weeks…), but the only thing I do not have in the fridge is ice-cream!
