I am a bit of a food freak. I love to have new strange products, because “you never know” 🙂 but I’m living with another food enthusiast, so my fridge is always full. I had to make some space and use as much products as possible. What’s better than the quiche! It’s tasty and also it’s a good way of using a sausage. And honestly, that’s the best quiche I’ve ever made.
You will need:
For a crust
- 1 1/3 cups flour
- pinch of salt
- 110g cold butter, cut in small pieces
- 2 to 3 tablespoons ice-cold water
Filling
- 3 cooked sausages – thinly sliced
- 1 onion – diced
- ½ cup capsicum (diced)
- ½ cup zucchini (diced)
- salt and pepper
- 5 eggs
- ½ cup milk
- 1 tbsp plain flour
- ½ cup yellow cheese
Preheat the oven to 180C.
Start with preparing the crust for quiche. In a bowl mix flour and salt. Cut in cold butter knead everything with your hands, until everything connects nicely. Add 2 tablespoons of water, and knead with the dough until it holds together (maybe you won’t need a third spoon). Forms a ball, wrap in plastic wrap, and refrigerate for about 30 minutes.
On a lightly floured surface roll out dough into a circle about 30 cm. Fit dough into a pie plate or quiche pan (trim edges leaving a little overhang). Prick dough with a fork and bake quiche crust for 10 minutes at 180°C.
Now it’s time for the filling. Heat an oil on a frying pan and fry the onion until soft, then add in the capsicum and zucchini. Stir for about 5 minutes. Add sausages and stir well.
In a blender mix the eggs, milk and flour. Season with salt and pepper to taste.
Transfer the sausage mix to the quiche pan over the dough, pour in the egg mixture and sprinkle with the cheese.
Bake for 25-35 minutes (until the center is set).
