I remember a ritual associated with eating the quiche for breakfast when I was living in Sydney. I had my favorite cafe with a perfect cup of coffee and simply delicious morning quiche. I miss those hot days (it rains here almost every day) and I used to miss quiche as well… util this morning, because I baked a nice one with spinach, leek and bacon. The only difference is the rain outside the window …
You will need for pastry:
- 2 cups of flour
- 150 g butter
- 3 tbsp of water
- pinch of salt
For filling:
- 250g spinach
- 150g leek
- 200g swiss cheese
- 300g smoked bacon
For eggs and cream mixture:
- 3 eggs
- 1,5 cup light cream
- pinch of pepper
- pinch of salt a
- pinch of nutmeg
We will start with preparing the pastry. Cut the butter in little cubes, add flour, a bit of cold water and knead with your fingers until even. It would be great if you put it into the fridge for 30 minutes. When it’s ready press pastry into a round form (24cm – 28cm), preheat the oven to 200°C and pre-bake for 12 minutes.
Meantime you’ll have some time to prepare the filling. Start with frying the bacon for 5-8 minutes, then do the same with leek and spinach.
To prepare the egg and cream mixture just mix all ingredients in a bowl.
When the base is pre-cooked, layer bacon, spinach, leek and grated swiss cheese and cover with eggs-cream mixture.
Bake at 200°C for 40 minutes. The top will become brown, but don’t worry, your quiche will taste amazing.
