I’ve found quinoa in a store and that was the first time I’ve seen it in my life. I had no idea how to eat it, but I bought a package. I said to myself “let’s experiment” and I came back home. And now the best part – I googled the word “quinoa” and found plenty of amazing recipes. One of them you can see below – it is a bit different, eating cooked quinoa feels like eating caviar, but is yummy!
You will need:
- 1 cup cooked quinoa
- ½ cup coconut milk
- 3 Tbsp. crushed pineapple
- ¼ tsp. cinnamon
- 1 1sp. maple syrup
- 2 tbsp. toasted coconut
- pecans
- 1 cup sliced strawberries
At the beginning you have to cook quinoa and if you’re as green with a subject as I was, you can use a bit of advice. So… it’s good to soak it in a water for about 15 minutes. Then move it to the pot and add one cup of water and one cup of milk. Cook on a big heat till it start to boil, and then reduce the heat to low. It should be cooked for about 30 minutes and when done, put it on side for 5 minutes.
The next step will be to mix cooked quinoa, coconut milk, crushed pineapple, cinnamon and maple syrup in a medium pan and cook it for around 5 minutes, stirring occasionally.
In the end top quinoa mixture with toasted coconut, pecans and sliced strawberries. And believe me – it tastes beautiful!
Enjoy, Marta

Quinoa does not need to be soaked or cooked 30 minutes. Simply put in a pot of boiling water (1:2 Quinoa to Water ratio) and it will be done in 10-15 minutes.
