I’ve read a lot about quinoa and apparently it’s very healthy. It also has a specific taste, so it’s nice to add some extras to it. Quinoa cakes taste amazing. That’s for sure. If you add a poach egg and a watercress leaves, it’s even better.
You will need (for 3):
- 1 cup cooked quinoa
- ½ cup bread crumbs
- 1 egg
- 2 egg whites
- 1 green onion, finely chopped
- 20g extra sharp cheddar cheese
- salt and pepper
- watercress leaves
- 3 poached eggs
In a bowl mix the quinoa, eggs, egg whites, onion, cheese, salt and pepper. Add the bread crumbs and leave for a couple of minutes. Form into three cakes. On a large frying pan heat an oil and fry on a medium heat for about 7-10 minutes on each side.
Serve with the watercress leaves and a poached egg.

YUM, these look amazing! I recently made quinoa cakes and loved them, and I bet they would be amazing with poached egg and greens – wow! 🙂
