Quinoa Porridge with Plums in Syrup

Those of you who sometimes visit my blog know, that I love quinoa. This feeling results in the eternal search for new recipes. However I’ve never mentioned why I like it so much and it’s not just because of a lovely crunch that I feel while I bite it. 

A friend told me that it contains an almost perfect balance of essential amino acids, and apparently it does. It is also a source of proteins, magnesium, phosphorus, iron, vitamins B and a vitamin E. I read somewhere that even NASA appreciate it and feed astronauts with it.  It does not contain gluten and has a low glycemic index. Oh, and apparently it contains more calcium than milk. What’s there not to love?

The first time I’ve ever tried quinoa was over a year ago and since that day I try to make it as often as possible, each time in a different variation. 

Today I’d like to present a typical breakfast version – quinoa porridge with plums and a syrup. I got a jar of plums in a syrup from my mother in law and this is how she made me a happy gal. I also have a couple of jars with raspberries and strawberries. I have no idea how to explain myself not to eat it all and save a bit for a winter period. And what’s much more difficult – how to hide it from Tomasz.

You will need:

  • quinoa
  • plums in syrup

It’s good to soak quinoa in a water for at least 15 minutes. Drain it, transfer into a pot, add on ½ cup of quinoa ½ cup of water and ½ cup of milk (or just 1 cup of water) and bring it to a boil over a high heat. When it starts to boil reduce the heat to low and cook for another 30 minutes. When done, set aside for 5 minutes.

Serve it with plums and few spoons of syrup. After a breakfast like this one, your body will be very grateful 🙂

    This quinoa porridge looks delicious especially with the plums and syrup. I’m sitting thinking about what I’m going to make for breakfast in the morning and this is looking good. However, I might have to substitute grapes for the plums. I have some of those big purple grapes, so I think they might work. Wish I had plums. 🙂 Thanks for the suggestion!

    Wow, quinoa porridge?! What an awesome idea. I’m big into quinoa too right now. It’s so great and filling, and like pasta or couscous but so much healthier! I’m going to tell my wife about this – she loves porridge and I bet she’d love to give this a try one morning!
