Happy Easter everyone! Have a lovely time, get rest, enjoy company of people you love and eat all the goodies! But then, after Easter, if you feel like something healthy for breakfast, red quinoa with raisins and pecans will be perfect.
You will need (for 2):
- 1 cup of water
- ½ cup of red quinoa
- 1/3 cup of raisins
- 1/3 cup of chopped pecans
- ¼ tsp cinnamon
- 1 tsp maple syrup or agave syrup
- ricotta cheese and strawberries (optional)
In a saucepan heat the water with quinoa. Bring it to boil and reduce heat to low. It will take about 15 minutes for water to evaporate. When quinoa is ready put it on side for a couple of minutes, then add raisins, pecans, cinnamon and syrup. I poured hot water over raisins, so it was softer. You can serve it with ricotta cheese and strawberries. But I must tell you, it tastes well just like it.

I need to try making sweet quinoa! I always do it savory, but something like this for breakfast would be delicious!
I usually do something similar in rolled oats, I have only recently started using quinoa and I love it but I have yet to make a breakfast with it.

Happy Easter. I have been eating quinoa for breakfast lately but don’t really like the flavour. I am hoping to get used to it. It’s one of the grains I can eat safely. I need to add something to it to drown the flavour.
