Red Quinoa with Raisins and Pecans

Happy Easter everyone! Have a lovely time, get rest, enjoy company of people you love and eat all the goodies! But then, after Easter, if you feel like something healthy for breakfast, red quinoa with raisins and pecans will be perfect.

You will need (for 2):

  • 1 cup of water
  • ½ cup of red quinoa
  • 1/3 cup of raisins
  • 1/3 cup of chopped pecans
  • ¼ tsp cinnamon
  • 1 tsp maple syrup or agave syrup
  • ricotta cheese and strawberries (optional)

In a saucepan heat the water with quinoa. Bring it to boil and reduce heat to low. It will take about 15 minutes for water to evaporate.  When quinoa is ready put it on side for a couple of minutes, then add raisins, pecans, cinnamon and syrup. I poured hot water over raisins, so it was softer. You can serve it with ricotta cheese and strawberries. But I must tell you, it tastes well just like it.

      Try it. you’ll love it. It’s delicious plus healthy. Some people need to get used to a taste, but it’s worth it.

    Happy Easter. I have been eating quinoa for breakfast lately but don’t really like the flavour. I am hoping to get used to it. It’s one of the grains I can eat safely. I need to add something to it to drown the flavour.
