Rhubarb and Vanilla Jam

I always wanted to make a jar of jam but I had this vision that it’s difficult. I remember someone told me that you need to boil fruits for a few hours and it’s definitely few hours too long. And lately I’ve found a nice and simple recipe, and a result of it was delicious, so try it as well. Rhubarb cake is delicious, so is jam 🙂 

What you need:

  • 250g of rhubarb, cleaned and finely chopped
  • 1 cup caster sugar
  • 1 tablespoon vanilla
  • 2 tablespoons water

In a pan all ingredients and cook it for 2-4 minutes on a lower heat (until sugar has dissolved). Increase heat to medium and cook for next 10-12 minutes stiring constantly, until thick and sticky.
