Summer is just behind the corner. Within days (ok maybe weeks) it will be hot, sunny and summery. So grab rhubarb and make a syrup, you can enjoy it while lying in a sun. If you’re not sure how to use it, I’ll give you few ideas – as an addition to iced tea or with a sparkling water or make a delicious drink by adding orange juice, lemon juice, sparkling water and few leaves of mint. Too easy to pass on it, isn’t it?
You will need:
- 500 g rhubarb
- juice from 1 orange
- 2/3 cup sugar
Cut rhubarb in 2 cm pieces, place with sugar and juice in a pot and boil on low heat for about 30 minutes. Drain it and leave to cool down. When in a room temperature pour it into a bottle and place in a fridge.

I added a little rum and created a “rubito” (Mojito but with the rhubarb syrup.) Yummy!!!
Rhubarb is probably my favourite thing in the world. I’ve never thought to make a syrup from it, for some reason, but I bet it’s delicious.
I love rhubarb. It’s one of my favourite things at the moment (heading into the winter months!). This syrup looks divine. I can even imagine eating it drizzled over yoghurt or ice cream with some granola or crunchy nuts. Thanks for the idea Marta xx

Yes! I made a similar rhubarb syrup last week, and it’s so good. Love the idea of punching it up with orange too!
