They say that whenever you’re feeling blue you should serve yourself a small treat. Something to make you feel better. I’m sick and couch attached for almost a week now and I miss my walks and social life. But ricotta pancakes made me feel quite good about myself. It tasted like a small cloud in your mouth, it’s delicate and juicy. Just perfect. I still can’t wait to go outside, but at least I had something delicious to eat.
You will need (for about 8):
- 1 cup ricotta cheese
- ¾ cup flour
- ½ teaspoon baking powder
- 1 ½ tablespoons sugar
- pinch salt
- ¾ cup milk
- 3 eggs, divided
- ½ teaspoon vanilla
In one bowl mix dry ingredients, in another the wet ones. Beat the egg whites untill stiff. Combine ingrediens from both bowls and whisk in a small amount of the egg whites. Blend it gantly and add the rest of it.
The only thing left will be to fry your little clouds. Heat a frying pan (medium heat), melt some butter and fry one side for about 3-4 minutes, then flip on the other one.
I had mine with bluberries, but you can serve it with bananas or whatever fruits you have at home. Some people like it simply with a bit of butter on a top.

I used all purpose flour, but you can try to replace it. Maybe just add 1/2 cup of whole wheat.
