I usually eat tomatoes fresh. I like to mix it with mozzarella and basil, but I’ve never roasted it as a trio before. This was a big mistake. You want to try this recipe. So simple, yet so tasty. You will need:
- 3 medium tomatoes
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper
- 3 slices of mozzarella
- 3 basil leaves for serving
For a dressing:
- handful of fresh basil
- 1 garlic clove
- 2 tbsp olive oil
Cut tomatoes in half, place them in a baking dish cut side up, dazzle with oil, balsamic vinegar and season with salt and pepper. Bake in 180*C for about 20 minutes. After this time place mozzarella on 3 halves and bake for 5 more minutes.
Meantime blend all the ingredients for dressing.
When tomatoes are ready, place a leaf of basil on each one covered with mozzarella and cover with another half. Top with a dressing. Tastes great with a slice of good bread.

Oh! This is a good dish! I’ve had this before — I saw it in a cookbook (I’m drawing a blank on which one at the moment) some years ago and made it. It’s wonderful! Thanks for reminding me of this.
Being Mexican I of course love tomatoes. (They came from here.) Roasted is an amazing way of bringing out so much flavour from tomatoes. Your dish looks fantastic and s pretty too!:)
