Roti with Spinach, Green Beans, Mushrooms and Burrata

It’s good to be in my kitchen after 100h of flying back home.

I’m back in Berlin. It took, bagatelle, 100h flying, well almost. 4 flights for sure, some time waiting in between in Sydney, Hong Kong and Munich. I started on the 2nd at 4 am in New Zealand and ended on the 3rd at 7 am in Berlin and I have no idea how to count it. Ok I know, I just refuse to do it. What I want to remember was fun. Mia running like crazy on each airport, magically taking me to a bookstore where ALWAYS was something with Peppa Pig. How is it possible that 2 years old knows where to search? During the flights she was mostly sleeping and sometimes we were eating ice creams or watching cartoons or eating the plane food, which she loves (just like me, it’s a long story, but for me plane food means adventure behind a corner). And All that I could think of was how amazing Mia is and how grateful I am that I have an adventurous little girl who does not mind me taking her on a 5 week long adventure, that I stack her in an old van to drive around an island and that she truly appreciates each day.

Now I’m back home, Tomasz took Mia for a weekend, so I can sleep and he can catch up with each change on her face. I was supposed to sleep and rest but hey, didn’t I mention that I’m a big fan of a jet lag? I love getting up at 4 am and starting my “day” with coffee and to catch up with the world. This is what happened during the weekend. I was cooking, eating and enjoying that no one takes over my food within the first one second. I missed cooking, styling, photographing and eating. But I miss Mia more. If you ever consider traveling with your toddler by yourself in a van for a longer time be alert. You will get addicted to the awesomeness of your kid and it will miss it each minute when it’s not around. I am making a research to buy a van and go on a road to Scandinavia, how crazy is it, I’m back for only a couple of days.

This recipe comes from my heart. Or stomach. Or mind. I felt like roti. It’s not a breakfast from New Zealand, nor from Hong Kong, but I just wanted it. Roti is easy to make and delicious. You can mix it with condensed milk and banana, which I will post as well (got the idea while I was writing it) or with whatever you want. I chose fried spinach, green beans, mushrooms and burrata. And it was good together.

The Recipe

YOU WILL NEED FOR ROTI:

  • 75g plain flour
  • 75 g whole wheat white flour
  • 100 ml water (or more if needed)
  • pinch of salt

YOU WILL NEED FOR SERVING:

  • fried spinach
  • fried green beans
  • fried mushrooms
  • buratta
  • whatever else you like
  • oil for frying
In a bowl mix flours and salt. Add watter bit by bit and mix it with flour. You may need a bit more water to make all the ingredients connect well. Then knead the dough for about 10 minutes (the fun part) so it does not stick to your hands anymore, cover witha tea towel and let it rest for about 30 minutes.

Divide dough into 6 small balls and roll each one of them into a round shape or whatever shape you like really. It should be thin.

Heat a frying pan well, pour a bit of oil (but you don’t need to use oil) and place each piece on a pan. Fry on each side for a minute or so, so it’s fried and switch to another side. Roti is ready 🙂

Serve your roti with what you like. I chose fried spinach, green beans, mushrooms and burrata.

    Its weird but I mostly look forward to plane food myself! I’m not always happy with what I get but i do look forward to it. Mia is such an amazing kid! Mine, whenever she goes to India with me, always insists only on eating indian food. Aren’t they just such amazing people?
    I am indian so of course I love roti. This looks absolutely divine… Maybe you could try making lentil roti? Its delicious.

      Oh I love the idea of lentil roti, I’m going on your blog to check it out. I love to learn how amazing kids are. I had no idea what Mia’s reaction will be, but now I see how easy it is to travel with her, she’s just so interested in everything and in new flavours. I hope to take her to India as well. PS.       I really hope so, I want her to travel with me as long as possible. I already count days till she starts school, so I can take as much as possible from the time I have left 🙂
