I have a love/hate relationship with my waffle machine. No, I take it back – I have only hate relationship with the waffle machine and a love one with waffles. There’s something seriously wrong with this piece of equipment. I think I’ll set up a new goal in my life – get rich, buy Kitchen Aid waffle maker and through mine out of the window. I can already see it in a slow motion… and I’m almost satisfied.
These babies are not sweet waffles, but you can add a maple syrup and they could be. As a mum-to-be I think that my child won’t realise that there’s a bacon and blue cheese inside. Maybe I could even add few additional veggies, huh… I may be one of this bad, bad mums – you’ll see my baby girl running around with a piece of apple on a stick, saying that she got a lolly pop from me 😀
As these are savoury waffles, I served them with delicious organic cocktail tomatoes and lettuce. Veggies went really well with crispy waffles.
You will need (for 2 people):
- 1 cup flour
- 1 egg
- 1 cup buttermilk
- 3 slices bacon, fried and cut into small pieces
- 50g blue cheese, cut into small pieces
- 1 tbsp brown sugar
- 3 tbsp baking powder
- pinch of salt
- 1 tsp black pepper
- 30g butter, melted
Mix all ingredients in a bowl and and mix so it will combine. Fry in your waffle machine. Remember to grease it before pouring the dough.

Bacon and blue cheese in waffles? I LOVE IT! Your baby will be a gourmet before 3. Guaranteed! I am not making waffles too, but in my case it’s my skills. So it’s my husband’s job to make waffles. =P

I have a hate relationship with my waffle maker as well. It’s not easy to clean and sometimes when pouring my batter in, it will decide to tilt causing everything to spill over. I feel your pain. But when it does work, the waffles that come out are heavenly. I typically make sweet waffles, but THESE look good enough to make the switch. Endless opportunities for toppings too!

My waffle maker works almost perfectly, and somehow, your waffles still look better than mine. I wasn’t expecting to see brown sugar in the recipe, but I’m absolutely loving that sweet and savory piece.
