Scrambled Eggs with Asparagus

When I was a little girl I used to beg my mother for scrambled eggs. I could eat it each day but there was one rule. It had to be just eggs, nothing more, maybe except for salt. When I was a teenagar my older sister used to feed me with eggs combined with each possible vegetable that was in the kitchen. I did not love it but I liked it. Now I’m back to my mama’s style. I like my eggs with maximum one or two additions. It can be with onion or with sausage or with bacon or… with asparaguses. I made it today and it was soooooooo good. Asparagus is one of my favorites, I’m glad that there will be spring in Europe soon (it’s still snowing there!) and I can eat it all the time. If you like asparaguses as well, here are some additional recipes.

You will need:

  • 1 bread slice
  • 2 eggs
  • few asparaguses
  • ¼ small onion, chopped
  • 1/3 garlic clove, finely chopped
  • olive oil
  • salt and pepper

Cut asparaguses in half and cook in a salted water for about 4 minutes.  On a medium heat with a bit of the olive oil glaze the onion, then add garlic and drained asparaguses. Fry for a couple of minutes. Meantime toast a slice of bread in toaster or an oven. In a small bowl mix the eggs, add salt and pepper and pour it into the pan. Fry to achieve a consistency of eggs that you like. When it’s ready transfer on a toast.

    Hi Marta, I had the extreme pleasure of getting some beautiful teal-coloured duck eggs recently, which I scrambled for a breakfast here in England. They were fabulous – so different from hen eggs, I hope you can try them some time because they’re worth the effort of finding them.By the way – I heard that it’s better to salt the eggs once they’re cooked as adding it before will cause water to run out of them as they cook. Not sure if it’s true but I do it that way and it seems to result in a less dry scramble, though I guess technique has a lot to do with it and some people might not have that problem at all.
