Scrambled eggs are always good for breakfast. Any eggs are. It’s one of easy choices if you don’t have too much time in the morning.
You will need:
- 1 slice bread, toasted
- 2 eggs
- 25 ml milk
- 4 dried tomatoes
- parmesan
- butter
- salt & pepper
- mayonnaise
Soak tomatoes in a little bit of boiling water for 5 minutes. Dry them and chop. In a bowl combine eggs, milk, tomatoes, salt and pepper. Heat a frying pan and melt a spoon of butter, then fry the slice of bread on both sides. Melt another spoon of butter, add the egg mixture and stir continuously until the eggs start to set, when it’s almost done, take the pan out of the heat and leave for a minute or so (so the eggs will be less runny).
Spread the toast with mayonnaise, top with scrambled eggs and spread with parmesan.
