You have no idea how much you want to make it.
There are things that we love and we hardly ever do them. Like with exercises, after 30 minutes we feel endorphins and it makes us happy. We know it, we remember about it and we don’t do it. The same is with cakes – it is extremely nice to make the batter and to bake, then to decorate. We use good ingredients, can make it healthier and it’s delicious. So now you know, you have to exercise and bake! You should also try to make a caramel. Do you love caramel on your bread? Of course you do and If you say you don’t, it means that you don’t know what you want and you should trust me on this one :D. I personally love caramel and I always wanted to do it, but through 37 years of my life it did not happen. Thankfully, it’s the end of the year and 2017th was all about trying things and living a full life. I did it, I finally tried to make caramel. It did not work out the first time, because sometimes things don’t work out. I did the second time.
There are things I do understand now about caramel:
1. You cannot really measure it with time, you have to look at it and stir it. You may have a gas stove and I have one on electricity and it’s just not the same. It may be more humid in your area or much hotter. It all has an influence. So just watch your caramel.
2. Never taste it before adding cream! I did it, it was a huge mistake, it glues to your lips and tongue and burns it. We are mostly adults here, so please learn on my mistakes.
3. You have no idea how much you want to make it. I know that this is a pure sugar with a tiny bit of water and cream. It is not healthy or low in calories, but it will make you happy. It’s this guilty pleasure you can have from time to time.
YOU WILL NEED:
- 1 & ½ cup sugar
- ½ cup water
- big pinch of sea salt
- 1 cup creme fraiche
Then let it boil for about 20-30 minutes without mixing. Just look at it. You want Sudan to caramelise so to burn a bit. The watery mixture should become slightly brownish. Shake the pot from time to time, so it won’t burn only in the middle.
Add cream and start to mix it in. There will appear some foam, it’s ok. It will disappear while you mix it. Right there, in front of your eyes the caramel will appear.
Move it into a jar and try to hide really well. If you have a family or a partner, they will eat it. Once again, learn on my mistakes. Hide it!
Enjoy, Marta

I too, made the mistake of tasting caramel before adding the cream. Ouch!!! Yes, yes, caramel is full sugar and calories, but DARN it’s good! Your method is a little different from mine which always doesn’t work, so looks like I need to give yours a try. Thanks!

Caramel is the best! I eat it even on a sandwich 😀
Haha, I would totally try it before adding the cream. Thanks for the warning! This looks so good!

Do not do it, it is painful plus it is sharp, it creates this kind of a strong candy that you suck on. Not the coolest experience 😀
Your writing really makes me want to bake now. hhaaa. And it looks sooo yummy!

Thank you, it is super yum 😀
Karmel jest pyszny, uwielbiam go z płatkami ryżowymi lub najzwyklejszymi z krakersami.
Nigdy go sama nie robiłam, ale czas to zmienić 🙂

I am going to shock you now, but I really do not like caramel. I love the look of it, but am quite quite happy NOT eating caramel. It is too sweet for me ahahahah. Husband on the other hand is craaaaaazy about caramel.https://bloglairdutemps.blo…
