Souffle Omelette with Jam and Berries

I had an intensive weekend, full of work and excitement. We had an amazing weather over here, you may say the summer time, but unfortunately I couldn’t use it at all. As Monday came, good weather disappeared as well. That’s why I’ve made this amazing omelette with berries to cheer myself up. And it helped!

You will need (for 1):

  • 3 eggs, separated
  • 1 tsp vanilla extract
  • 2 tbsp icing sugar
  • 20g butter
  • raspberry jam
  • raspberries
  • blackberries
  • single cream or yoghurt to serve

Whisk the egg whites until nicely tight. Mix the eggs yolks, vanilla extract and ½ tablespoon of sugar in a second bawl and beat then together. Slowly start to add egg whites into the yolk’s mixture and mix it slowly.

Melt the butter on a 20 cm frying pan over a medium heat,. Pour in the egg mixture and cook for 3-4 minutes (until golden), then move on the other side just for 1 minute or so.

Transfer the omelette on a plate, put some jam and berries on it and fold in half to enclose the filing. Dust with the rest of sugar.
