Souffles have tendency to collapse. This is a facts and it happens even to the best chefs. But there are days when it does not collapse. I had it today, well…almost. It shrinked just a little bit. Still, it’s definitely worth mentioning. One day it won’t collapse at all. I’ll bravely train.
Souffle with cherries is a good start of a day. You may think that preparation is time consuming and you don’t want to bother in the morning, but it’s not. Add a cup of good coffee to it and it will be like a birthday morning. You can replace cherries with strawberries or blueberries, or better – mix everything.
You will need (for 2-3):
- 2 eggs
- 30g cream cheese (like Philadelphia)
- 60g goat cheese
- zest from ½ lemon
- 2 tbsp sugar
- ½ cup cherries (without seeds)
- butter to grease forms
Grease baking forms with butter. Split yolks from egg whites. Whisk egg whites and when almost ready, start to add sugar.
In another bowl mix cheeses with yolks and lemon zest. Add egg whites in three parts, mix it very gently. You don’t want to over mix.
Divide cherries between forms and cover with the cheese mixture. You can sprinkle some sugar on top if you like.
Bake in 200*C for 10-15 minutes. Serve with extra cherries on top and a bit of castor sugar.

Huh, I thought soufflés always collapsed by default, in their very nature, hence the need to decorate and serve them immediately. Still – you managed to get one which didn’t reduce down to a little pancake in a pot that’s great news! It looks lovely too 🙂

My souffles do not have the “tendency” to collapse: they ALWAYS collapse! Beautiful and inspiring breakfast, a great way to start a warm summer day.

I’ve made souffles a couple of times and it is so much fun. It is a bit like magic and chemistry all at the same time. Yours looks beautiful and rich. I also get the same thrill when making Yorkshire puddings…I can barely leave the oven window while they are poofing taller and taller!
