Spinach and Cheddar Muffins

I went on a market yesterday and found an amazing leafs of a spinach. I had to buy them (since I love the taste of spinach) and figure out how to use it. While I was looking for an inspiration, Food Beam blog was very helpful, and I’ve started to bake muffins. It must be delicious, because Tomasz had six of them at once (again!).

You will need (for 12):

  • 30g of butter
  • 1 small onion, finely sliced
  • 1 big clove of garlic
, finely chopped
  • 1 chili pepper, finely chopped
  • 350g of flour
  • 2 ½ tsp baking powder

  • 200g of cheddar, grated
  • 250g of milk
  • 1 egg
  • 130g of spinach

Preheat the oven to 170°C. 

Melt the butter on a frying pan and fry the onion on a medium heat till golden, then add the garlic and the chili and mix it well to combine the flavors.

In one bowl stir the flour, baking powder, pepper and cheddar, in another bowl beat the milk and egg together, then mix dry and liquid ingredients together. Now you can use hands or a wooden spoon to mix in the onions and spinach.

Divide the dough into twelve holes muffin-tin and bake for 35 minutes. When it’s golden and smells delicious, cool it for few minutes and enjoy with a bit of butter an a cup of fresh coffee.

    Can’t wait to try this recipe – looks awesome! But I’m a little confused. The recipe calls for 250g milk. Do you mean 250ml or do I need to weigh the milk in grams? If you could answer my question please, I’d be very appreciative! 🙂

      It equals 250ml, so don’t worry, you don’t have to weigh it 🙂 I hope you’ll like it!

        I am American and don’t know the equivalents. 🙂 Do you have this recipe in that way? I am a little bad with the equivalents but this looks so good i want to make it for a Christmas Brunch.

          Here are the equivalents: 2 tbsp butter, 2 and 3/4 cups flour, 1 cup milk. I hope it’s helpful 🙂
