Let’s talk about muffins. The muffin subject may be a difficult one. There are so many recipes to choose from and to be honest in most cases we are not even sure what we’re looking for. These muffins are good, even too good to be true. I had two people waiting to style for me, just because they wanted to eat them asap. The addition of the peanut butter makes it very special. Roasted nuts are a beautiful idea and berries coated in honey and lemon zest are mind-blowing.
So this is what you will make them tomorrow, or even today.
The original recipe comes from my favourite cookbook ever: Bondi Harvest by Guy Turland and I am forever grateful for it.
YOU WILL NEED FOR THE DOUGH:
- 2 cups flour
- 1 tbsp baking powder
- 1 cup brown sugar
- 1 egg
- 225g natural yogurt
- 160ml thin cream
- 80g melted butter
YOU WILL ALSO NEED:
- 300g raspberries
- 250g strawberries
- 1 tbsp honey
- zest from 1 lemon
- 100g nut butter (almond, peanut or whatever you have home)
- 25g roasted nuts
In a bowl delicately mix berries, honey and lemon zest and let it stay there for 30 minutes or so.
In another bowl mix ingredients for the dough.
Fill half of each muffin hole with the dough , place some berries inside, add 1 tsp of the nut butter on it and cover with some more dough. Sprinkle roasted nuts on top.
Bake for about 40 minutes and try not to eat all of them straight away.
