Sweet Breakfast Couscous with Fresh Fruits

Who would think that you can eat healthy couscous even as a fruity breakfast. I’ve found this recipe some time ago and couldn’t stop thinking about it and since I’ve tried, I had it a few times. I’m sure you’ll love it as well.

What you need:

  • 1 cup cranberry or apple juice
  • ½ cup cous cous
  • ¼ cup dried cranberries
  • diced strawberries (as many as you like)
  • mixed fresh fruits like berries, grapes, cherries or any other you like
  • ½ cup mix of nut & seed

Boil the juice and pour it to the bowl with couscous mix with dried cranberries. Leave it for around 10 minutes. Once the juice is absorbed, pour the nuts, seeds and fresh fruits.

For the best result serve it when couscous is warm with honey and a spoon of tasty yoghurt.
