Three Recipes Good for A Campervan Kitchen

Living in a campervan is not a new thing for me, at lease not exactly. I used to travel with my parents each year when I was a kid. It was a bit more complicated for my mom because we had a caravan and there were three kids (I have two sisters), but I have Tomasz, so it’s like cooking for 4. My mom made a great work, it was so obvious to me that each day we have meals on time and it’s all yummy. When I started to travel with Mia by myself, I noticed, that it’s not so easy, because there are space and pots restrictions. That’s why this time I try to make meals as easy as possible and as delicious it should be. Here are a few creations from my campervan kitchen. It is not a breakfast food, but since I eat whatever I want for breakfast, it could be!

Mushroom and onion crepes

Crepes always work. ALWAYS! In New Zealand I used to fry about 30 in the morning and we had some for dinner as well. Now I have Tomasz on board so it’s hardly enough for a breakfast. I have many crepe recipes on my blog, for example this one is delicious. For the filling you will need:

  • 1 onion
  • 150g champignons
  • ½ cup thick cream
  • Parmesan
  • salt and pepper
  • few mint leaves
  • oil for frying

Chop onion in small pieces and fry over a medium heat, then add champignons cut in slices and fry both for a few minutes. Add cream, salt and pepper and simmer for a moment, so flavours combine. Serve rolled in crepes with some freshly grated Parmesan and mint leaves.

Rice with veggies and egg

This is the smartest way to make Mia eat veggies. She loves rice and egg and thesis the moment when she finds all the colourful pieces in her rice look awesome. I like it as well. It’s easy, pretty fast and yummy. You will need:

  • 1 cup rice (cook it as your package says it should be)
  • 1 carrot
  • 1 onion
  • 1 garlic clove
  • 1 small can of corn
  • 1 small handful of peas
  • 2 eggs
  • salt and pepper
  • olive oil

Cook your rice as you usually do it. Mean time heat your pan with 1 tablespoon of oil, add onions and fry them for 2-3 minutes, then add carrot cut in small pieces, chopped garlic and peas. Fry it so it gets tender. Now you should add rice. But if you have a medium size pan like I do, you will have to divide everything in two tours. If you have a bigger frying pan then place all the rice in the pan, add a splash of an olive oil and mix everything well. Make a space in the middle and crack two eggs. With a spoon, mix them and leave it the middle, so they scramble. When they are almost ready, start to mix eggs with rice and veggies. Add salt and pepper and it’s ready! You can also add a splash of a soy sauce and a bit of sea same oil. I didn’t as I didn’t take it, and it was amazing.

One pot mushroom and broccoli pasta

This was the best lunch idea! It is super easy to make and you create a minimal mess. If you’re washing dishes in your van, you want to have as little as possible. At lease I do. I saw a similar recipe on Oh My Veggies and I went to a store and grabbed what I remembered. The beauty of this recipe is that you can change the ingredients. Just try to mix veggies that have a similar time of cooking.You will need for my version:

  • 1 small onion, chopped
  • 1 garlic clove, chopped
  • 1 medium broccoli head, cut in pieces
  • 2 handfuls champignons, sliced
  • one handful of spaghetti pasta (amount for 2 people), broke in half (preferably with 8-9 minutes cooking time)
  • 3 cups water
  • 1 tbsp powdered veggie broth
  • Salt and pepper
  • Splash of an olive oil
  • 1 tbsp cream
  • 3 tbsp Parmesan, grated
  • handful of parsley, chopped

Place onion, garlic, broccoli, champignons, pasta, water and broth, salt and pepper, splash of an olive oil in a pot. Let the water boil and then start to mix everything for about 8 minutes. There’s not much water, so you have to mix so everything has a chance to be cooked. Add cream, Parmesan and parsley and cook for two more minutes. Serve straight away and enjoy each bite as it’s awesome!

    We camped a lot in France and Italy when I was little. My brother and I loved it! There was always a forest nearby and we grilled most of our dishes over an open fire. It’s a wonderful experience and you learn how to cook in a simple and delicious way. For me some dishes taste even better when I can eat them outdoors 😉 Thanks for sharing the recipes. I’ll so try them. First at home because I cannot wait until our next camping trip. Especially the crepe recipe sounds too delicious to wait another two weeks 😉
