Tiny Cupcakes With Champagne for Brunch with Girlfriends! – Sponsored

We have a kind of a Breakfast Club with my friends. We meet on Sunday, prepare a huge breakfast together, then we eat, talk, usually laugh a lot and finish it with a very long walk. I love to do it, it’s so refreshing and it gives me a crazy amount of energy for the next week.

But last Sunday was different. The thing is that I miss my girlfriends and time without boys (sorry boys!). Girly talk is necessary from time to time and when you do it, do it right!

So I did something special – I called my girls and invited them for a brunch with champagne. Oh yes I did! I prepared mini cupcakes, big enough for a bite and we had it with the most amazing Moet Champagne. There was sharing (top secret), laughing and now I know that I’ll definitely make it a regular thing, as it was too cool not to repeat it.

You will need for savory cupcakes:

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • ½ cup red onion, finely chopped
  • 1 tsp fresh rosemary, chopped
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ cup carrot, grated
  • 1 cup cheddar, grated
  • ½ cup dried raspberries
  • 1 egg
  • 1 cup of milk

Heat an oven to 200*C.

Place all the ingredients in a bowl and mix them well.

Places mini papers in forms for mini muffins and and pour the dough into them.

Bake for about 15 minutes.

Serve with a beetroot hummus or cream cheese with herbs.

You will need for sweet mini cupcakes:

  • ¼ cup buckwheat flour
  • 1 tsp baking powder
  • 1 tsp pollen
  • ¼ tsp ground cinnamon
  • pinch of salt
  • 2 eggs
  • ½ mashed banana
  • ½ mashed avocado
  • juice from ½ lemon
  • 3 tbsp agave syrup
  • ½ apple, diced
  • 2 tbsp sunflower seeds

Heat an oven to 180*C.

Place all the ingredients in a bowl and mix them well.

Places mini papers in forms for mini muffins and pour your dough into them.

Bake for about 20 minutes.

Serve with a creamcheese and fruits.
