I like the combination of simple tastes. A cheese sandwich (white or yellow) with tomato is one of my favorites. But few months ago I’ve started to play and experiment with food and to look for an interesting recipes. So the simple sandwich with cheese and tomato turned into a sandwich with ricotta cheese, mustard, roasted tomatoes and chives. Oh roasted tomatoes – it’s flavor and softness makes it so special. And if you mixed them in olive oil, balsamic vinegar and add a little garlic, the effect is simply amazing. A bit of mustard in combination with ricotta stimulate your taste buds. So why not get up in the morning, put tomatoes in the oven for 25 minutes, take a bath, and then try them on toast? Taste guaranteed! 🙂
You will need (for 2 slices of toast):
- 3 Roma tomatoes
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- salt and pepper
- 2 cloves of garlic
- 2 large slices of bread or toasts
- 3 tbsp ricotta cheese
- 1 tsp Dijon mustard
- chives to sprinkle
Preheat oven to 230ºC.
Cut the tomatoes into halves or quarters (depending on size). In a small bowl mix it with oil and balsamic vinegar, sprinkle with salt and pepper and add garlic. Mix ingredients, then reload them on the baking tray covered with baking paper and bake for about 25 minutes.
On a frying pan toast bread slices (I lubricate each side with a little bit of butter). on each spread ½ teaspoon mustard, then 1,5 tablespoons of ricotta. Fit as many tomatoes as possible on each toast, sprinkle with chives and season for taste.
