Tomato Galette – Cooking with Friends

Ladies and Gentelmen great things are happening for Grebers. Surly the biggest one is La Petit Greber almost among us, but there are other as well. We had a pleasure to cook with friends of friends – Freunde von Freunden. I am sure that most of you’ve heard about them, but if not yet, there’s so much of inspiration on their site, that you want to check it out.

We’ve prepared four breakfasts together and you’ll have a chance to cook with us each Sunday. Today we start with an easy to prepare and yummy to consume tomato galette. Check out the article with beautiful pictures by Robbie Lawrence and words by funny Effie Efthymiadi.

And for the next Sunday invite your friends over and make breakfast with them and friends of friends.

You will need for galette:

  • 250g flour
  • 110g butter
  • 1 tsp salt
  • 1 egg
  • 3 tbsp water

For a filling:

  • 500g cherry tomatoes
  • 1 tbsp fresh thyme
  • 2 tsp brown sugar
  • 1 tbsp olive oil
  • 50g cream cheese
  • 50g parmesan
  • pinch of black pepper and salt
  • pine nuts, roasted

Start with a dough. Place flour in a bowl and add cold butter cut in cubes. Rub it with fingers. Add salt, egg,water and knead, so all the ingredients combine. Form a bowl, wrap it in a plastic foil and place in a fridge for 30 minutes or so.

In a small bowl combine cream cheese, parmesan and pepper.

Heat a frying pan over a medium heat, add oil and tomatoes. Sprinkle with sugar, thyme and fry until tomatoes get soft (few minutes).

Divide dough in two parts and roll into a round shape (about 25 cm wide). Spread a cheese mix equally on both doughs (leave few centimetres on sides) and divide tomatoes. Fold the dough on sides so it holds tomatoes inside.

Bake for 30 min in 200*C.

Fry fine nuts on a pan and spread over a ready galette.
