Tomato, Olive and Goat Cheese Sandwich

We have a crazy days over here. Friends, love and happiness. Each morning we’re trying to prepare something tasty, not always something new. But today we had a nice morning with perfect sandwich!

You will need:

  • ¾ cup oil-packed sun dried tomatoes, chopped and drained
  • 1 cup black Kalamata olives, chopped
  • 1 garlic clove, finely minced
  • ¼ cup capers, drained
  • ¼ tsp dried oregano
  • 1/8 tsp black pepper
  • whole grain bread
  • olive oil
  • goat cheese
  • 2  tbsp of milk

Preheat an oven to 400°C. 

Combine tomatoes, olives, garlic, capers, oregano and pepper in a bowl. Mix together the goat cheese and two tbsp of milk in another bowl. Slice the bread, brush it with the olive oil and bake for about 8 minutes (until nicely brown and crispy).

Spread the goat cheese mixture on each toast and top with tomato and olive mixture. You can drizzle it with the extra olive oil if you feel like.
