Are you also totally consumed by preparation for Easter? I am currently searching for some interesting recipes and each new blog makes me change my mind. This will be the first easter that I’m actually going to make something so I am very exited. I’ve collected 7 recipes so far and I can’t wait to start.
My main dilemma now a days is if I should go for a chocolate or lemon Bundt cake. Or maybe both? For sure there will be mouths to eat it 😉
Today I have for you something a bit mexican. A bit, because it contains tortillas, but is more sweet than spicy. Of course you could add chili powder to the meal, but I am a sweet tooth, so I’ll pass.
The dish is light and doesn’t consume much of time, so makes it perfect before Easter madness.
You will need (for 2):
- 2 tsp honey
- 1 tsp fresh lime juice
- ½ cup sour cream
- 2 tortillas
- ½ cup shredded Monterey Jack cheese
- 1 chicken breast
- 2 nectarines
- cilantro
In a small bowl mix together honey and lime juice, stir in the cream and place covered in a fridge until needed.
Fry the chicken and cut into small pieces.
Over half of each tortilla sprinkle the cheese, chicken and top with pieces of nectarine and few leaves of cilantro. Gently fold tortillas in half and place on a large frying pan greased with an olive oil. fry each side on a low heat until golden brown. It will be easier if you press the top with a plate or a big spatula.
Cut the tortillas in two pieces and serve with sauce.
