My version of Banh Mi is slightly different as I did not manage to find all the ingredients, but it means that it is easier for you.
Many years ago on our way back from Australia to Europe, we stopped in Asia for almost a year. It was a crazy adventure, which included beautiful views and experiences like swimming with whale sharks or staying with Monks in Myanmar , but also ending up in a military hospital in the middle of Indonesia (Tomasz). I totally changed my style as I shaved my head completely and accidentally bought frames, which were usually worn by monks (I sat on my glasses and I like to see, so I had to get something cheap and fast). It made me look very specific and thanks to it I was treated as not a woman, but I guess I’ll write about it another time.
It was also a time when I fell in love with Asian food and ended up hating rice and any soup based on broth for years. When you travel on a very small budget, you eat a lot of it. I remember when we got to Vietnam and we got a sandwich from a stand on a street. OMG it was amazing! I wanted to eat 5 at once as I did not have bread in my mouth for almost half a year and I looooove bread! This is when my love for Asian sandwiches started. A few weeks ago I started to read a lot about Vietnamese cuisine and I found a great sandwich option on White on Rice Couple blog. My version is slightly different as I did not manage to find all the ingredients. But as always in cooking, you need to go with what you have on heand. It is delicious though! If you like sandwiches, try it. If not, try it anyway :).
YOU WILL NEED FOR ONE:
- 1 sandwich baguette
- pate
- ham you like
- carrot
- sprouts
- parsley
- 2 fried eggs
- salt and pepper
- chilli peppers or chilli paste
- soy sause
- sesam sause
- mayonaise (optional)
Cut carrot I small pieces. On heated pan, pour ½ teaspoon sesame oil and add carrots. Fry them for a few minutes, so it gets soft. Just when it gets soft, add ¼ tsp of a soy sauce and fry just for a minute. Set aside and repeat the same with sprouts.
Spread mayonnaise on one piece of baguette, place some pate and ham, then carrot and sprouts. Place fried eggs on top, add parsley and chilli peppers. Pour some soy sauce over the other side of baguette. You can also spread some chilli paste if you like it spicy. Season with salt and pepper.
