Yogurt with Toasted Quinoa, Almonds, Pistachios and Dates

When I was a young girl my mother loved yogurts. Even more, I think she had a small obsession. Our fridge was full of them, especially the peach ones. At the time I hated it and could not understand why the rest of my family was eating it like it was ice creams on a hot day.
Few years later I was shocked that people actually like plain yogurt. Come on, it’s not sweet at all! It’s mot a milk nor a sour cream and the taste is just strange.
And now, open my fridge and you’ll find at least one plain yogurt at any time. Who would say I’ll like it so much and appreciate it’s flavor. I think I grew up 😉
Being in the yogurt subject, have you ever tried it with a red quinoa, dates and an olive oil? Gosh, it is delicious!
And the recipe is from the blog Food52. Sorry I forgot to link you, I always do it, as I love to search new recipes through the internet.
You will need (for 1 portion):
  • ½ tbsp red quinoa
  • 5 shelled pistachios, chopped
  • 5 almonds, chopped
  • greek yogurt
  • 2 dates, pitted and chopped
  • lemon zest, a pinch
  • sea salt
  • 1-2 tsp olive oil
Heat the oven to 175*C.
Toast the quinoa in a small pot until it starts to pop. Put it on a side to cool down.
Spread the pistachios and almonds on a baking trey and bake for 5 minutes. Let it cool.
Spread the yogurt on a small plate, sprinkle over the quinoa, pistachios, almonds, and dates. Fleck with lemon zest and sea salt, and finish with the olive oil.

    I love lovvveeeee your blog I’ve looked at every recipe and cook from it all the time. I hope you don’t mind a suggestion. The 1st time I made this recipe I thought “sure that was fine.” The 2nd time I was starving so I made it in a bowl with extra everything (*extra lemon zested directly onto yogurt) and it was so good. I think this recipe is suited to be approached like dressed up oatmeal, not spread delicately on a plate. Each flavor didn’t lose it’s delicacy this way and it became so rich and satisfying but not heavy (cause it’s still a bowl of yogurt).
