Zucchini Pancakes

I’m getting very excited, as the next two weeks will be all about weddings (I’ll attend 2!), traveling and hanging out with great people I haven’t seen for a while. I can’t wait! I could surely avoid a “packing part” as I never know what to take and I leave it up to the last moment. I also need two dresses, but this will be a nice shopping obligation 😉

I still have too many things to do and organize before I leave, so I need a good and fast breakfast. Zucchini pancakes are great for this occasion. I’ve found it on Wypieki z pasja blog and I know that it wasn’t the last time I had them. You can eat it on  many ways – sweet, with a feta cheese, spicy, or simply just like it is, still hot from the pan. It will take like 10 minutes to make it and it’s definitely worth it 🙂

You will need:

  • one medium zucchini
  • 1 large egg
  • small red onion, finely chopped
  • 3 tbsp parmesan cheese, grated
  • 3 tbsp flour
  • a few leaves of fresh basil, chopped
  • 1 tsp of herbs de Provence
  • a few drops of lemon juice
  • freshly ground pepper (3-4 pinches)
  • salt to taste

Combine all the ingredients in a bowl and then fry on an olive oli, on a medium heat. I mabe each pancake out of one tablespoon of the zucchini mix.

It goes very well with a sweet and spicy sauce.

    Such a pretty picture! I don’t even like zucchini but wow, those look good. Have fun at the weddings!I have a tip! Kaffeehaus SowohlalsAuch In Prennzlauer Berg. Germans love the cake, not me so much, but the croissants (not the pretzel croissants, but the plain .89 croissants) are the best I’ve ever had. So if you’re in the area, go pick some up!

      I forgot to add that there are two parts to this place. There’s the cafe which is on the left, and then the bakery, which is on the right. I wasn’t even sure that they were the same place. It says Baeckerei und Konditorei above the entrance you need to go in! It’s clearly a bakery and the other one looks more like a cafe. You want the bakery!

    I tried to make zucchini pancakes once but I failed, aha…but perhaps I will try them again with your recipe! Have you ever had potato pancakes? Not the Jewish kind, but less fried and with a lot more green in them? I can’t remember where I had them but they were delicious 😀
